Masters of Chocolate look abroad and see something even richer

Five years ago, the Belgian chocolate maker Jean Galler collaborated in opening a restaurant in southern Namur where the main courses are flavored with chocolate.

“For example, you might have a foie gras with a touch of chocolate in a sauce,” he said, “or a salmon salad with a vinaigrette with white chocolate.”

The restaurant was a huge success, and, last year, Mr. Galler, who trained in Switzerland and has 30 stores, 13 of them in Belgium, opened a chocolate shop in Fort Lauderdale, Fl, and plans to open other outlets in the United States.

“The Mayas and the Aztecs used chocolate as a spice,” he said, over hot chocolate in his shop in the upscale Uccle neighborhood of Brussels. And indeed, a package of three of his chocolates contains varieties spiced with curry, ginger and angelica.

“Mexico is our roots,” he said. The relative youth of the gourmet chocolate market in the U.S. means it has plenty of room for growth. American tastes are becoming more sophisticated because of greater exposure to fine foods through travel abroad and celebrity chefs on TV.

The trend in gourmet chocolates is toward varietal types-specific cocoa beans grown in specific locations-much like the vintage of fine wines. But, total cocoa content is the most important ratio, and a premium chocolate contains no less than 50 percent total cocoa. The processing is also very important. The longer the chocolate is stirred or conched, the smoother and creamier the resulting chocolate. Conching time ranges from as little as four hours to as many as ninety six hours.

Galler is an “artisanal” chocolate, hand made, created fresh, with unique recipes and natural ingredients : no coloring, preservative or artificial aroma.

Galler’s chocolate has been rated amongst the top European chocolates, and won the 1st retail prize at the Fancy Food Fair in New York in 2001.

We were out of one kind of candy, so a customer had to choose something else

I work in a store that sells all kinds of gifts for different occasions, and we even sell greeting cards for holidays, birthdays, and anything else you can think of. One of our most successful holidays for selling cards and gifts is Valentine’s Day, and a lot of the time, people are very interested in buying   chocolates for their loved ones around this time of year.

 

Therefore, my boss likes to order a lot of different kinds of chocolates to be sold during Valentine’s Day, and we often have more chocolate Gifts than we have shelves for. However, we never have had a problem selling the chocolate Gifts quickly because people love to give chocolate for Valentine’s Day.

 

Most of the time, the favorite for people to buy is the chocolate Truffles. My boss buys more chocolate Truffles than any other candy, but it never seems to be enough. The chocolate Truffles are always the first candy to be sold. We usually have people that ask for them, but since we are sold out have to get one of our other chocolate Gifts instead.

 

 

Once, I did have a customer that wanted the truffles, but we had already sold them all. He was not happy to have to pick out something else for his wife, but a few days later he came in and said that his wife loved the different kind of chocolates he had gotten. The Fifth Annual Hudson Valley Wine & Food Fest that takes place September 9th & 10th at the Greig Farm in Red Hook, New York will offer wine tasting, cooking demonstrations, live music and more than 120 gourmet specialty food, fine art and craft vendors as well as family friendly activities like hayrides, a corn maze, kids crafting, a bouncy obstacle course and more!

WineRacks.com, the producers of the event are excited to be going into the fifth year of the Fest. Attendance is expected to be over 10,000 patrons over the course of the 3 days this year. The Fest gets started with the Grand Reserve Tasting on Friday evening September 8th. This kick-off event is always a highlight of the Wine & Food Fest. Once again proceeds from this special event will go to benefit the educational programs of Dutchess and Ulster County Cornell Cooperative Extensions. Award winning wines will be paired with scrumptious hors d’eourves prepared by some of the Hudson Valley’s favorite restaurants and caterers, there’s a silent and live auction and grooving tunes by White Boys on Swing.

For the Wine & Food Fest itself, there will be over 120 vendors this year, not only great wineries, but all sorts of gourmet specialty foods, fine jewelry and art. There will be cooking demonstrations from celebrity chefs like Ric Orlando from New World Home Cooking in Woodstock and Jean Jacques Carquillat from Le Canard Enchaine in Kingston. Live music will play all day from Too Blue, The Meg Johnson Band and the Hi Flyers.

The food concession area has been expanded. Our favorite “chocolate man”, Chef Dan Budd will be back serving his delectable chocolate confections and coffee. The spectacular Soul Food from Soul & Caribbean Cuisine and the traditional German fare from the Wurst Haus will return as well. In addition, patrons can enjoy exotic Indian food from Chataka at Mountain Gate Lodge, the worlds’ best crab cake sandwiches from Sherri’s Crab Cakes and gourmet “blow torch” cooked kabobs from Gendron Catering, pizza, fried dough, steak sandwiches and more!

This year’s Fest benefits from great sponsors that will be adding some new things; ING Direct will be offering tethered hot air balloon rides to support their children’s charity and the Creations with C.A.R.E. Team from Big Yellow Box by Crayola will offer 2 full days of kids crafting for free.
