Discover the Secrets of Traditional Venetian Cookies With Organic Food Baking Recipes

From the enchanting Venetian lagoon on the Adriatic sea in Italy, when Venice was the center of commerce with Asia from the 13th to the 19th centuries, organic baking traditions were born that are still practiced today by housewives and pastry chefs. Explorers and sailors carried foodstuffs on board the merchant and war galleons that would survive the long voyages in the perilous seas. Among these were sweet treats, simple to make, that in name and taste, reflected their Venetian origins. Not to mention that in those days, the only existing agriculture created organic food; no pesticides or additives were used in foods, except those from mother nature herself.

The Queen of these, and the most famous, is the organic cookie named “Biscotti Baicoli”. Created in the 1700′s, the word “baicoli” is Venetian dialect for sea bass. In fact, their oval, thin, long shape is very similar to the sea bass which inhabit the lagoon. At that time, bakers supplied them to coffee shops, or they were served to house guests along with zabaglione cream, hot chocolate or tea. Still others served them with a sweet Doge’s desert wine, the Venetian Moscato dei Doge.

Today they are considered a delicate, light, yet flavorful organic cookie to be enjoyed by everyone. In fact, almost every child in Venice today knows the poem in Venetian dialect which brags of the goodness of the Baicoli and its Venetian origins.

In the lagoon sits Burano, the fisherman’s island, famous for it’s rows of brightly colored houses. From this tiny island comes the organic cookie “Bussola Buranello”, which translated, means the compass of Burano. Here too, the marine traditions date back centuries. Baked in a shape like a backwards “s” or an outline of a circle, this cookie was a typical Easter treat, kneaded at home by the women of Burano, and then brought to the baker’s for baking. On feast days, it was dipped in holy wine “vin santo”, or in local whites. Packaged, they were placed in the middle of clothes drawers in order to scent them with the delicious aroma characteristic of this cookie.

Still today, considered a genuine and nutritional organic cookie, it is enjoyed in the same manner, or served to children.

Both organic cookies are easy to prepare, with simple organic food ingredients. The recipes follow:

Biscotti Baicoli -

Organic Food Ingredients: 1 ¾ cups flour, ¼ cup melted butter (unsalted), ¼ cup sugar, 1 small glass of milk, one half ounce of yeast

Dissolve the yeast in a small amount of tepid milk in a glass, and then mix it together with ¼ cup of flour. Form a ball and leave it to rest, covered by a cloth, in a warm place until it doubles in volume (approx 30 min).

Mix together the remaining ingredients, starting with the flour and sugar, then the melted butter, and finally the tepid milk. (You may also add a bit of freshy squeezed orange juice for more flavor) Add the leavened dough and knead all together.

Leave the dough in the mixing bowl and place the bowl in a larger bowl of boiling hot water in the oven (turned off), for at least one hour.

Divide the dough in roughly 6 long, oval shapes, each roughly 3 inches in width. Cook in the oven for approx 10 minutes at 300°, and then increase the temperature to 430° until completely cooked (approx 1 hour). Remove from the oven and let it completely cool. Then thinly slice the 6 oval shapes into organic cookies, and put them back in the oven to “toast” for approx 20 min at 120° – 175°.

Dip in hot tea, coffee, or hot chocolate. Or serve with zabaglione cream or a sweet desert wine.

Bussola Buranello -

Organic Food Ingredients: 6 egg yolks, 1 cup butter softened at room temperature, 1 cup sugar, 2 cups flour, a dash of extract (choosed between, vanilla, lemon or anise, the island tradition), a dash of salt.

On a kitchen workspace, form a volcano shape with the flour, and in the middle create a crater where you add the softened butter (not melted).

In a bowl, lightly beat the eggs with the sugar. Then add this to the butter /flour mixture, and quickly mix /knead with your hands.

Take the dough and create the desired cookie shapes (outline of a circle or backwards “s”) and cook in the oven at 350° until done.

Modern versions add dark chocolate chips, raisins, or substitute a bit of the white flour with coconut flour.

Serve these organic treats at home along with your usual array of organic foods or try them on your friends at your next gathering. Bring to your table a culinary, organic, pastry delight which is centuries old, yet enjoyed every day by Venetians and tourists alike.

To produce cocktails used in almost all types of alcoholic drinks: brandy, vodka, whiskey, gin, brandy, rum, tequila, balms, liqueurs, various wines, champagne, beer.

From the soft drinks used:

- Fruit juices, especially citrus fruits (lemon, lime , orange, grapefruit),

- Ready mix “Sauer” (in the form of liquid or dry concentrate), which includes lime or lemon juice and sugar,

- Soda water or mineral water, lemonade, tonic, cola, etc.

Often used ice cream milk, liquid or whipped cream, coffee, hot chocolate. The structure of cocktails such as flip, ego-feet and includes some of the other eggs.

At my local coffee shop they make the best frozen hot chocolates!! But it’s like almost $ 4 for a small!! So I was wondering of a tasty frozen hot chocolate mix. Oh yeah and like for me I made one that was okay with vanilla ice-cream and hot chocolate mix and a little ice. But it just doesnt taste the same so anything will be appriciated.

Grandma’s Old Fashion Chocolate Cake Recipes

Chocolate is one of the most popular type of cakes around the world.  Remember the wonderful chocolate cakes of your childhood?  Perhaps one of these great recipes will bring back that taste and wonderful memories for you.  Here are three varieties, you’re sure to find one to please.  Cherry Devil’s Food Cake is simple enough for a beginning baker.  It uses a box mix and a few simple steps to make a great cake.  Bittersweet Chocolate Cake is a buttermilk chocolate which is always tasty, and Dutch Mocha Chocolate Cake is sure to please the coffee lovers in your circle of family and friends.

CHERRY DEVIL’S FOOD CAKE

1 box Devil’s Food cake mix
2 cups frozen whipped topping, thawed
1/2 cup chopped maraschino cherries
1 recipe of your favorite chocolate frosting

Preheat oven to 350 degrees. Grease and flour two 9-inch layer cake pans. Prepare cake mix as directed on package. Divide the batter evenly between the two pans. Bake and cool as directed on the package.

Fold the maraschino cherries into the whipped topping. Spread over the top of one of the layers. Top mixture with the second cake layer. Frost with the chocolate frosting. Store cake in the refrigerator.

BITTERSWEET CHOCOLATE CAKE

1 1/2 cups cake flour
1 1/2 cups sugar
1 cup buttermilk
1/3 cup shortening
3 egg whites
3 squares unsweetened chocolate, melted
1 tsp baking soda
1 tsp salt

Preheat oven to 350 degrees.

Grease and flour two 8-inch round cake pans. Into a large mixing bowl measure all ingredients; mix with electric mixer at low speed, beat until well mixed, constantly scraping bowl. Beat at high speed for 5 minutes, occasionally scraping bowl. Pour batter into pans and bake 30 to 35 minutes. Cool layers in pans on wire racks for 10minutes. Remove cakes from pans and cool completely on wire racks. Frost with your favorite frosting.

DUTCH MOCHA CHOCOLATE CAKE

3 cups sifted cake flour
1 tsp baking soda
3/4 cup cococa
2 3/4 cups sugar
1/2 tsp salt
1 cup hot coffee
1 cup sweet butter
1 cup sour cream
2 tsp vanilla
5 egg whites

Preheat oven to 350 degrees.

Thoroughly grease three 9-inch cake pans. Combine flour, baking soda, and salt together and sift three times. Combine cocoa, 1/2 cup of the sugar, and coffee. Cool. Cream butter and 1 1/2 cups of the sugar until light and fluffy. Add cocoa mixture, sour cream, and vanilla. Add flour mixture, stirring until smooth. Beat egg whites with remaining sugar until stiff. Fold into the batter. Pour batter into pans and bake for 30 minutes. Cool and remove from pans. Frost with your favorite frosting.

Recipes: Chocolate Souffle

Half a pint of milk, two ounces of Walter Baker & Co.’s Chocolate, three tablespoonfuls of sugar, one rounding tablespoonful of butter, two tablespoonfuls of flour, four eggs.

Put the milk in the double-boiler, and place on the fire. Beat the butter to a soft cream, and beat the flour into it. Gradually pour the hot milk on this, stirring all the time. Return to the fire and cook for six minutes.

Put the shaved chocolate, sugar, and two tablespoonfuls of water in a small pan over a hot fire, and stir until smooth and glossy. Stir this into the mixture in the double-boiler.

Take from the fire and add the yolks of the eggs, well beaten; then set away to cool. When cool add the whites of the eggs, beaten to a stiff froth.

Pour the batter into a well-buttered earthen dish that will hold about a quart, and cook in a moderate oven for twenty-two minutes. Serve immediately with vanilla cream sauce.

Obviously this doesn’t mean that you should run to the store to buy some candy bars. But it does mean that when eaten in moderation, dark chocolate can be a healthy choice as a dessert.

And whether is good for you or not, who can resist a fondue pot of hot melted chocolate just waiting for your to dip something into it. What better way to enjoy strawberries, bananas and other ripe fruits. But don’t stop there. Be sure to try dunking some salty treats into the chocolate such as pretzels and potato chips. Mixing sweet and salty foods creates a unique flavor that you are sure to enjoy.

Dark Chocolate Fondue
12 ounces Premium Dark Chocolate (chopped)
3/4 cup Whipping Cream
2 teaspoons Kahlua or other coffee liqueur (optional)

Over low flame, heat whipping cream until warm (DO NOT BOIL)
Slowly add the chopped dark chocolate while stirring
Stir until the mixture becomes smooth
Stir in liqueur
To Dip:
Strawberries, Bananas, Sliced Apple, Cubes of Pound Cake, Cubes of Angel Food Cake, Pretzel Sticks, Chunks of Pineapple, Marshmallows, Potato Chips

Mint Chocolate Fondue
1/2 cup Heavy Cream
2 tablespoons Peppermint Liqueur
8 ounces Semisweet Chocolate

Warm the heavy cream over medium low heat
Add liqueur
Grate the chocolate or break into small pieces and slowly add to mixture while stirring
Stir until the chocolate is melted

To Dip:
Candied Fruit, Pears, Peach Slices, Cubes of Pound Cake, Cubes of Angel Food Cake
