Wine and Chocolate the Perfect Couple

Wine and chocolate seem to be two of the world’s favorite comfort foods. A good glass of wine can make any dinner seem more romantic, any bad day a little better and any lonely night a little warmer. A good dose of chocolate has chased away many a case of the bad-breakup-blues, tamed the savagery of a day spent trying to please the boss, and kept many a single girl from crying herself to sleep. Now, I suppose that once upon a time, admitting you paired your Pinot Noir with your Hershey bar might have made you seem pathetically dire and disheartened. Society, however, has finally figured out that our two favorite self-indulgences are perfect for each other. The society mavens and trend setters have stolen the lonely girl’s perfect night in, transforming it into a fun and fresh night out – the wine and chocolate party.

You don’t have to be a connoisseur to participate in the latest thing to hit a candy bar since foil wrappers. You don’t have to know if white or red goes better with a good rib eye steak. You don’t have to know your Californians from your Australians from your Italians. Or your dry whites from, well, whatever isn’t. All you have to do is be a good matchmaker.

Hosting a wine and chocolate party is somewhat like being a good marriage broker. Every yenta has her “list” of eligible, desirable bachelors to choose from. Every wine and chocolate hostess should have a similar list. You can start with the wine, or you can start with the chocolates – it really doesn’t matter. I’d suggest going with whichever you are most comfortable with. If you don’t know Chablis from Champagne, start with the sweet stuff. If you aren’t quite certain just what those percentage of cacao numbers are telling you, better hit the wine cellar first. Either way you go, you can’t lose as long as you choose sweeter wines and/or a variety of chocolates. You’ll want red and white wine both, as well as some bubbly. On the chocolate side of things, try to select fro the entire spectrum – dark, milk, white, and a few of the in betweens.

White chocolate may seem like a misnomer and I’m certain Montezuma and the rest of his cacao-pioneering band of Aztecs would probably be frightened to death of the pale, ghostly stuff. It has, however, its own merits in the chocolate world. Its light, smooth, buttery creaminess helps it to stand out among its darker cousins, despite its lack of any real cocoa butter. I suppose you could say it was the pinnacle of chocolate engineering. What goes best with the stuff that’s tops of the lists – from the winning jockey to the New Year? Why champagne, of course! Now, you needn’t have the “real” stuff from the Champagne region of France. A nice sparkling domestic will do the trick just as well. If you and your guests are in the mood for something a bit noble and different, try a good Sherry. If a more subtle taste experience is desired, pairing white chocolate with a crème or chocolate liqueur is sure to delight the pallette.

Milk chocolate may seem too common for a party. After all, it’s been America’s favorite chocolate since Milton Hershey way back in the 1890’s, right? It’s that common, every man experience that makes it a wonderful addition to your wine and chocolate party, especially if all or most of your guests have never been to one before. The milder, less complicated taste and aroma of milk chocolate make it a perfect pairing with Merlot, Pinot Noir or tawny port. Port has a nuttiness that compliments milk chocolate’s caramel undertones, while the darker wines will bring out its creamy, subtle chocolate side to perfection.

Semisweet chocolates, those with 50 to 69% cacao, have a spicier, fruitier, earthier note to their taste. Which wine you pair with them depends on which of those tones you wish to highlight. Zinfandel wines will accent the chocolate’s spicy side, setting the mood for a mambo in your mouth. A nice Cabernet Sauvignon is sure to bring out the fruitiness of the chocolate. Beaujolais can also serve nicely to stress the fruity nuance of many semisweet chocolates.

Dark, or bittersweet, chocolate is the queen of the chocolate world. Much has been touted concerning its health benefits. Pair those benefits with the reported health-inducing factors of wine and who needs an excuse to have a party? We can say we’re doing it for our health! Dark chocolate is classified as having 70% or more cacao content. This high amount of cacao is responsible for the “good for you” factor, and gives the chocolate dark, rich, woodsy flavors. Most of the same wines that go well with semisweet chocolate also make nice matches with its darker cousin. For a real treat, try pairing a nice dark chocolate with a good cognac. Orange Muscat goes well with almost any chocolate, but the darker the sweet, the better the Muscat seems to become. The rich, woodsy flavors of the darker chocolates pair themselves nicely with almost any strong, red wine, so try a shiraz or nebbiolo in the mix, too.

A successful wine and chocolate party will offer about a dozen sweet varieties of chocolate and the same number of wine pairings. Variety is the key. Don’t just stick with plain old chocolate bars, either. Dip some fruit in chocolate – strawberries in white would be heavenly with your champagne/sparkling wine. Indulge in some truffles – . Salty sensations also go well with wine, so perhaps some chocolate covered nuts or pretzels would make a nice addition to the menu. For a quick and easy party on the fly, ask each guest to provide a treat from one of the chocolate categories (white, milk, semisweet or dark.) Then, have a selection of wines to match up with whatever delights walk through your door. Put some jazz on the stereo and sip and nip your way into a comfortable, fun evening of tasty delight. Cooking Tips: Fun Dinner Dishes Using Chocolate

Chocolate is not a sweet by itself.  It is bitter and earthy, which is why it pairs so effortlessly with coffee.  It is deep and robust with lots of round flavors and high notes.  It can be used to temper sweetness or to bring out or round out flavors in a dish that lacks depth.  It can add both color and flavor to a dish, and it can be a secret ingredient, adding punch and locking the other flavors together.  When using chocolate, or cocoa, in savory dishes, keep its qualities in mind and use lots of creativity and daring.  You’ll undoubtedly come up with some really fun dinner dishes using chocolate, and you’ll be able to impress your friends with your bravery and culinary skills.

 

Chocolate in bread:

When adding cocoa to a bread recipe, substitute like you would for whole wheat flour or honey, knowing the end product will be denser and more chewy.  You can compensate for that quality or show it off, depending on the result you desire.  Chocolate pairs well with butter, chili, lavender, mint, and other aromatics in bread.  Try a chocolate lavender bread with honey butter by substituting 1/8 of the flour in your favorite white bread recipe with cocoa, adding dried lavender flowers, and adding food-grade lavender essential oil just before baking.  A chocolate bread would make a wonderful base for a bread stuffing (such as one you would serve at Thanksgiving or Christmas), French toast, or a Monte Cristo sandwich.

 

Chocolate in Chili:

Cayenne pepper and cocoa were made for each other.  Chili cuts the bitterness in the chocolate and brings every one of its flavor notes out to play.  That is why Mexican hot chocolate is such a spectacular drink.  However, when used in a savory meat or bean chili, cocoa can disappear into the tomato, smoke, and savory flavors of the dish and simply make everything rounder and deeper.  The next time you’re cooking chili or any other dish with tomato, chili powder, or cayenne and it is missing something, try adding up to three tablespoons of cocoa powder to make the dish really stand out.  You can even call it chocolate chili and see which of your friends are brave enough to try it out.  Cocoa pairs readily with bacon, maple, brown sugar, smoke, rosemary, sage, and chipotle peppers.

 

Chocolate in the standards:

Chocolate can be served for dinner in old standbys like souffle, fondue, and mole.  It can also be used with raspberries and cream as a dessert or cold soup.  Try sprinkling cocoa over pork with mint jelly or over baked white fish.  Add it to fajita flavorings, Mexican dips, and appetizer pates.

 

There is no end to the experimentation you can do when cooking with chocolate and cocoa.  Use it to deepen the color in pumpernickel bread or spaghetti sauce.  Cooking with chocolate doesn’t just open up flavor possibilities, but it makes available a whole range of health benefits, as well.  Unsweetened chocolate contains antioxidants and cocoa butter, both of which are good for brain and vascular health.  Eating chocolate keeps you young, and cooking with it keeps you safe from kitchen boredom.  Get out the cocoa and experiment.  It’ll take you straight to the depth of culinary happiness.

Does Chocolate Have Health Benefits?

Chocolate – real chocolate that is – is now recognised as having many qualities that can be beneficial for your health. By ‘real chocolate’ I mean chocolate containing Cocoa, Sugar, Milk Solids, Vanilla, Lethicin and nothing else.

THE UPSIDE OF CHOCOLATE!

Chocolate contains high levels of beneficial chemicals and antidioxants such as Seratonin, Phenylethylaminea, Pentamer and flavonoids. It is also high in essential trace elements, minerals and vitamins such as iron, calcium, potassium, vitamins A. B1, C, D, and E as well as many nutrients. Cocoa powder is also the highest known natural source of Magnesium.

Because it contains Seratonin and Phenylethylamine, chocolate can be good for mental health. These substances are ‘mood lifting’ agents which are released naturally into our system by the human brain when we are feeling happy or in love. Eating chocolate also releases Seratonin and Phenylethylamine into the system, thus (as all chocoholics know), when we are feeling down or depressed chocolate can provide a ‘lift’, instantly improving our mental state.

Studies indicate that a chemical found in chocolate called Pentamer help can protect against cancer.

Adding magnesium to the diet has been proved to increase pre-menstrual progesterone levels, helping to reduce or even eliminate the problem.

There are benefits for men too, as well as the high Magnesium and flavanoids content which are beneficial for the heart, arteries and hypertension, studies indicate that the cocoa butter in high quality chocolate, although technically a ‘saturated fat’, does not fur up the arteries or contribute to high cholesterol levels.

For over 100 years the British, army have issued soldiers with emergency or ‘Iron Rations’ of chocolate, containing very high levels of cocoa (80%+), for use in emergencies. Each ‘iron ration’ of 8oz’s – 227g of chocolate can not only provide enough nutrition to keep a soldier going for 7 days or more, it also helps keep up moral in difficult circumstances.

STOP PRESS Nov, 06: Results of a study by Johns Hopkins University indicate that chocolate acts in a similar way to Aspirin in effectively preventing blood clots in the arteries, reducing the likelihood of heart attacks.

THE DOWN SIDE OF CHOCOLATE!

They say “there’s no such thing as a free lunch” and chocolate, like all good things in life, has it’s problems too. It contains sugar and fat in the form of chocolate butter and eating too much of either will cause health problems. As a result, chocolate has developed an undeserved reputation for being unhealthy.

But, although recognised as being addictive to many people, particularly to Women, chocolate itself is not really the cause of the major health problems it’s been associated with.

These problems are caused by the simple fact that many chocoholics choose to satisfy their chocolate cravings in the unhealthiest way possible, by buying heavily advertised, mass produced, brand name, milk and white chocolates.

These products are generally very low in chocolate solids (ave less than 20%) and very, very high in sugar and saturated fats. The beneficial cocoa butter has usually been replaced with Hydrogenated Vegetable Oils (HVO’s), and there’s no question that HVO’s are catastrophically ruinous for your health. To make matters worse, because of the very low chocolate content, chocoholics have to eat 3 or 4 times more of this type of product to satisfy a craving for chocolate.

Filled chocolates, both the commercial variety and, sadly, many , are some of the worst culprits, with centre’s consisting almost exclusively of flavoured Fondants and pralines – fondant is virtually 100% sugar and many pralines aren’t much better.

The upshot is, if you want a guaranteed way to to get very unhealthy in a very short time, this is one of the most effective ways to way do it.

WHAT IS THE HEALTHIEST CHOCOLATE?

To find the healthiest chocolate the first thing you need to do is start reading the labels, real chocolate should only contain the following ingredients:

Dark chocolate should contain: Cocoa, Sugar, Vanilla and Lethicin in that order.

Milk chocolate should contain only Cocoa, Sugar, Milk solids/fats, Vanilla and Lethicin.

White chocolate should contain only Cocoa Butter, Sugar, Milk solids/fats, Vanilla and Lethicin.

Flavoured chocolates may also contain a natural flavouring such as Orange oil, spices etc, it should not contain Vanillin (artificial Vanilla), vegetable fats or anything else.

For our purposes here, the healthiest chocolate is going to be that which contains the maximum cocoa solids and the minimum sugar. This would make 100% pure chocolate the healthiest option, unfortunately this is virtually inedible because of it’s bitterness.

In practice all chocolate has to have some sugar added simply to make it palatable. Dark chocolate containing 70% (or more) cocoa content is generally recognised as being the healthiest option, simply because it contains more chocolate and less sugar.

If you must eat milk or white Chocolate, you should moderate your consumption and make sure your milk chocolate contains a minimumn 35% cocoa and your white chocolate contains a minimum 30% cocoa butter, with the balance of both made up of milk solids and sugar in about equal proportions.

If you like filled chocolates, either handmade chocolate or otherwise, choose those chocolates with fillings containing high cocoa content, covered with high quality chocolate coverture. Not mass produced, high sugar content Pralines or Fondants covered with low quality coatings that barely even qualify as chocolate.

Chocolate should contain ABSOLUTELY NO Vegetable oils or artificial additives of any kind.

BUT ALL’S NOT DOOM AND GLOOM!

If you love chocolate and/or filled chocolates, there’s good stuff out there if you look, and as chocolate lovers become more and more discerning, demand for the real thing grows, so it’s getting more plentiful by the day. For the healthiest way to satisfy a craving for chocolates, you just have to be more choosy over what you buy to eat (or for ) remember, the higher the cocoa content, the healthier it is….. and the nicer it tastes.

Healthy Chocolate – What Is It?

The concept of dark healthy chocolate is something relatively new. Everyone knows that chocolate tastes yummy, but most have no idea that it is a health food in the correct form.

Researching the internet, Xocai is the main product that appears on a google search. This company, MXI Corp, has been around for a couple of years, and offers a range of dark healthy chocolate options.

They even make healthy chocolate chip cookies! It is interesting to note that now other companies, including Cadbury, are quoting health benefits of healthy chocolate treats on their wrappers.

Is There Really Such A Thing As Healthy Chocolate?

When I was young, chocolate was considered a candy, something you shouldn’t have too much of. True Cadbury used to boast a glass and a half of full cream milk in every block, but that can’t be healthy considering what I have read about dairy and cholesterol?

What’s more, chocolate has sugar in it, or it tastes extremely bitter. This was before the days we were aware of toxins in our environment and all of the adulteration of foods by the food industry.

You would have to conclude that Cadbury chocolate was not dark healthy chocolate. Woudln’t it have been great if we had healthy chocolate treats in those days! No one even considered the possibility.

Research Says Cacao Is Healthy!

When you grind Cacao Beans, you get Cacao powder and Cocoa Butter. As it turns out, organic Cacao powder in its raw form, has been demonstrated to provide a wide range of health benefits.

First at 26,000 per 100 grams, it has the highest ORAC value (antioxidant rating) of any food. Studies show benefits for Heart, Circulation, Blood Sugar, Liver, Cholesterol and there are over 1200 studies published to date.

One could say that dark chocolate was heart healthy chocolate. Clearly it is not raw Organic Cacao that is the problem here.

Why Commercial Chocolate Is Not Healthy

Any chocolate containing vegetable oil includes Palm Oil. This is obtained by clearing rain forests in Indonesia and is threatening the Orangutan population. Not good!

Often Vegetable Oils are used to replace Cocoa Butter when reconstructing chocolate. My opinion, food in its natural state has all sorts of components that make it easier to digest.

There is full cream milk in much of the chocolate and because it absorbs environmental toxins, often lead and cadmium. These are dangerous heavy metals and cause all sorts of health challenges.

Finally there may be Trans fat, High-fructose corn syrup (HFCS), Artificial sweeteners, Soy , Monosodium Glutamate (MSG), and Preservatives and stabilizers . Beware of cheaper brands, as they are even less healthy! Avoid compound chocolate.

Other Chocolate Products. The healthiest chocolate is dark healthy chocolate, organic certified and containing a high percentage of raw cacao. There are claims of healthy chocolate bars, healthy chocolate chip cookies, and other healthy chocolate treats. I prefer a pure dark organic chocolate product with demonstrated health benefits.

What Is A Healthy Chocolate? A Healthy chocolate is organic and grown in an area where toxins are minimized. It is not harvested by child slave labour. It does not contain palm oil. Ideally it is certified organic and dark. It should be cold processed to retain the antioxidant value of the raw Cacao Beans.

Healthy chocolate treats are low in calories as well, so weight gain is not an issue!
